Koh Samui is a beautiful place. Totally set up for tourism. As such best way to get a taste of Thailand culture is to visit the markets.
There are 3 big markets to choose from:
Thursday night at Mae Nam from 17:00 to 22:00.
They shut off one of the small side streets off the main Mae Nam road, it’s a big U shape. Don’t worry if you miss this one, most of the vendors are present at the Friday markets. However, Mae nam is a quieter more intimate market with cocktail stands and live music dotted about.

Friday night at Fisherman’s village in Bophut is massive.
It’s set in around a complex of existing stores and restaurants. Definitely geared towards the tourists. Not as many locals at this one and with the shopping complex setting, it’s got a more modern feel to it. Very child friendly with wider space to walk etc. you could bring a pram easily and plenty of restaurants if you want to avoid street food. for restaurants, prepare to pay around $2-300 for a meal.
